For St. Kitts:
The ship will dock right in town. Walk around a bit, there is some shopping but not a lot.
Hire one of the friendly taxi drivers that will be there, and take a round the island tour, first going to Brimstone Hill, www.brimstonehillfortress.org.
Then stop at the Black Rocks, and drive to the Southeast Peninsula, where you'll find beaches and small beach bars. Bring your bathing suit. I would recommend South Friar's Beach and the Shipwreck Bar, Turtle Beach, or Cockleshell Beach and Lion's Bar.
It a gorgeous island with spectacular scenery. The tour will make for a wonderful day and give you a real sense of the island. It's easy to arrange on your own.

In Aruba, there is a 1/2 day jeep tour to a natural bridge. It was a pretty rocky drive in open air jeeps, but lots of fun. In St. Kitts, we had a great day at Turtle Beach. Totally relaxing with wonderful views.
