I want to take my adult daughters on vacation to celebrate my 60th birthday. I would like to go someplace that will create wonderful memories and be different than just sitting on a beach. I love to kayak in beautiful environments, so a place that would have kayak excursions with sea caves, dolphin watching, or some other incredible experience would be perfect. We don't have a budget. Luxurious, with great food, would be nice. My girls are 30, so parasailing, snorkeling, or other adventurous options would be nice too. We have 5 days so a short flight from NY/NJ would be best. Thanks for your help!

You don't say what time of year, but Bermuda would work. High season runs from May - October and it is a quick flight from NY. You really can't enjoy the activities you mentioned above in Nov - March; mid-April could work.

The Riviera Maya area of Mexico would meet your needs perfectly. There are many great resorts there. You could explore the Mayan ruins, snorkel in cenotes, kayak, zip line, etc.
