Check out the HORNED DORSET PRIMAVERA on PR's West Coast (short flight from San Juan); MAROMA, south of Cancun;
MAR BLUE in Treasure Beach,South Coast Jamaica as well as RIO VISTA in Port Antonio on its far northeast coast ;Harbour Island in Bahamas. Would decidedly NOT recommend Curtain Bluff...

Thanks to all who have responded to date. Recommendations have been great. I do have to say that I am getting a bit exhausted...all this research is tiring and I am no closer to finding what we're looking for. Updates....
Villa Rolandi had no availability for our dates; Cancun Ritz Carleton had no availability for a portion of our stay.
Maroma had no availability.
Horned Dorset in PR was lacking in some our requirements, but looked lovely (albeit expensive).
One and Only Ocean Club looks absolutely gorgeous, but no availability and a little beyond our price range.
So, still looking and getting a bit discouraged. Have not had time to fully research Jamaica (a tad wary of this, but don't want to be) or Harbor Island in the Bahamas.
Keep them coming.....

Thanks to everyone for all of the wonderful responses and recommendations. This forum has always been so helpful in my decision-making process.
As an update to my lengthy search.....we have decided, after all, to stay at CuisanArt on Anguilla. It really has everything we are looking for, with the only impediment being the flight times. Since then we have been able to book flights that get us to Anguilla by 3:20, which is just fine.
So thanks again. We are very excited about our destination and our accommodations and can't be happier. I am sure I will be posting again to get some recommendations on some great restaurants.....
