I stayed in Grand Bahia few weeks ago and went to Dolphin Island with my wife and 2 sons ages 12 and 9, we had a great time. Thanks to the suggestion of someone we had met at the airport for a shuttle ride back to our resort. We found a great deal on the basic swim with the Dolphins package on a website ran by a nice and very kind guy called Manuel. We found a few others but only went on the swim with the dolphins tour while we were down there. I though at first it would mainly be a thing for our kids to enjoy but my wife and I had a lot of fun as well, its worth checking out at least.

Another on that looked interesting was zip ling. I saw a few providers in the area that offered this type of excursion.

I almost forgot, those activities were in the Dominican Republic which is one of the Islands you mentioned wanting to go to. I haven't been to Cuba nor Haiti so I won't be much help there.
