Barbados vs. the Cayman Islands
I would love any imput from anyone who has visited both places. Which is the most scenic?

We have been to Grand Cayman once and Barbados twice. Barbados is definitely the most scenic. There is also more to do in Barbados. Both are lovely locations. You'll enjoy either one.
