I have made a few of those changes. My wife and I are both excited to bike so we may do so but the idea of a self-guided tour versus the Cycle City tour is a good one in case she gets winded. She'll be about 22 weeks at the time and so far she's been doing fine (thank God!) but definitely do not want to over stress her.
A few more pointed questions:
1. Kinda bummed that you guys think Whistler/Squamish/Salt Spring are too far for a day trip. Part of the trip for me is getting outside of Vancouver and seeing some of the beautify of BC. What do you guys suggest?
2. I have Capilano Suspension Bridge and Grouse Mountain scheduled for one day. Does that seem feasible?
3. I think a lot of our days will end by the afternoon. Is Gastown the go-to neighborhood to stroll and eat at night? (I am dieting for this trip - something I have never done before)

Thanks, all, for the help. One final question: Leaving from NY, we have a 1 hour layover time in Toronto before flying to Vancouver. I am assuming we will have to go through passport control before going to our gate? Will we also have to collect baggage? I am a bit concerned about the stopover time. Thank you.

IMHO I’d rather wander around Granville Island in the evening...Gastown just doesn’t do it for me.
If you are taking the Gondola up Grouse you really don’t need to go to Cypress. And Capilano and Grouse can be done in one day but it will be a full day.
The float plane to Saltspring is a lovely trip unless the clouds obscure the view...and it has a cute village to explore.

I've flown in and out of Toronto on a number of occasions flying international to Mexico. As a US citizen, not a Canadian citizen, there have been times flying back when I've gone through customs very quickly and other times when it's taken over an hour to go through. Just depends. An hour is on the tight side.

I would recommend Quarry Rock. The view from the top is amazing. I think that even with your wife being pregnant it is not too bad of a hike. I would recommend going on a weekday because it gets super crowded on the weekend. Other than that I would also recommend renting a bike and going around the sea wall. There are places where you can stop for a break too.
If you like Greek food there's a good place called Stephos. I believe there are two different locations. One is on Davie street and I can't remember where the other one is but it's also located in Downtown Vancouver.
