I don't cycle myself, but I imagine the Lochside Trail on the Saanich peninsula (near Victoria) would be a pleasant ride.

The islands off the east coast of Vancouver Island are easy biking.
The highway up the island has many places where the should disappears as you cross a bridge and a five tonne pulp truck snorting behind you...
Salt Spring Island was the best.
From here, you can return to Vancouver via Tawassan.
Bear in mind that if you are biking back into Vancouver, you cannot peddle under the Fraser river on Highway 99. There is supposed to be a shuttle service to pick you up. A guy with a van gave me a lift into Richmond.
