Just returned from those 3 places- enjoyed Sunday brunch at Banff Springs Hotel in Banff (make reservations)- also, for an inexpensive meal try Old Spaghetti Factory in Banff. Ate lunch at Laggans Mountain Bakery in Lake Louise and it was excellent. Ate twice at Jasper Pizza Place and it was very good (they have good salads and other pasta). The latter three are inexpensive. Also, ate at Patrino's in Canmore.

The restaurant at the Post Hotel in Lake Louise is very good. Also expensive. The hotel is very nice as it is part of the Relais and Chateau group. It has been a few years since we ate there, but at the time, the food was very good.
We also splurged and had dinner at the the big chateau hotel on Lake Louise in its fancy restaurant overlooking the lake. (Sorry can't think of the names - just turned 50!) Was very nice with piano playing, etc. Very elegant and expensive, but worth it to have such a wonderful view.
Hope this helps.

My recommendations for places to eat:
BANFF -
Coyotes Deli and Grill (need reservations because it is always so busy); serves lunch and dinner; great coffee!!!!!
Le Beaujolais (expensive but good)
LAKE LOUISE -
Post Hotel (expensive but wonderful)
CANMORE -
Don't go to Zona's, the service is atrocious (verrrrry slow and unfriendly)
JASPER -
Fiddle River Seafood Restaurant (pleasant ambience, good food, view overlooking the main street in Jasper and the mountain range to the east)
Becker's Gourmet Restaurant (food can be great; this is just south of the townsite and has a pretty view of the Athabasca River and mountains beyond)
Truffles and Trout (for soup and sandwiches and coffee).
A.B.
