Tasmania - south and east regions - accommodation

Hi
My husband and I plan on spending a week or two in Tasmania. While we will be in Hobart for a few days I am really interested in areas outside Hobart. We want to relax, ideally somewhere with lovely gardens and/or view and use the place as a base for day trips.
Any experiences of good places to stay - could be self contained, B&B or hotels.

I stayed at a fabulous B&B in Swansea called Meredith House. We used it as a base to go to Richmond, Freycinet, and Port Arthur. Swansea also has some fantastic restaurants such as The Banc:

I stayed at a lovely B&B south of Hobart with fantastic views of the waterway when I was still living in the USA but on a visit. I wrote a review on Trip Advisor but for some reason it was never published but here is the link anyway. We have a wonderful stay at Peppers Calstock in August this year. Our bedroom upstairs was huge, beautifully furnished and looked over the surrounding country for miles. Excellent food as well and a good base for day trips. See http://www.peppers.com.au/calstock/.

Many thanks for youe help. I booked us in for 4 nights at Waterview Gardens which seems to be well located for day trips in all directions. The coast and beaches are not as much of an interest to us.

Am also looking at the Tasman Peninsula and a couple of nights in Hobart as want to to do the art gallery trail

That's a lovely part of Tasmania, angelnot1. We stayed at Norfolk Bay Convict Station B&B, www.convictstation.com right on shore of Little Norfolk Bay at Taranna; almost over the road is Mussel Boys Cafe/Gallery, fabulous food with oysters and mussels super fresh from the lake. Only about a 10 min drive from Port Arthur.
