Sydney has the Australian Opera Company at the Opera House there and there are many other venues with great shows going on all the time.
I always stop and think a little when people talk about "culture" in a city because what is culture to me may not be culture to you and vise versa. I have been to London many times and have found that there was absolutely nothing that I wanted to see. For me, unless the Opera is Grand, unless the play is a Shakespeare I don't really want to know.
The Opera season and all shows are listed on the net for Sydney BUT beware as I heard there was a bogus ticket buying centre operating on the net for the Sydney Opera House tickets but hopefully that has been closed down now. Only book through the main site for the Sydney Opera house if you are going to book a ticket before you arrive to avoid disappointment.
Australian cities are not overflowing with "European culture" i.e. like Prague for instance which has about everything you would every want to see in every season. But then we are a small and young country and have other things that are of interest - which may be your thing. Melbourne has a lot of different "cultural activities" Adelaide has a cultural Festival as does Brisbane, Perth and Hobart but these are not all of the time and they are very concentrated in time too.
If you are only in Australia for a short time then you would want to stay fairly close to Sydney and not spend time sitting at airports. I don't think you have said exactly how much time you have in Australia. If you are only here for 7 days then I would tend to stay in and around Sydney because you will have enough within a 2.5 hours radius ( train or drive time) in that area to spend you time well. If the weather is especially nice then it won't come close to being enough!

I was in Australia last year, and spent a few days in the Red Center at Ayers Rock. I found that to be an amazing contrast from the cities most of us are used to seeing. The vista of the red earth, green trees, and blue skies in every direction is incredible. There are several options for walks around Uluru and to Kata Tjuta, some even led by local Aboriginal people. I think you can go on camel rides, balloon trips, and other activities. I stayed at the Lost Camel, a unique, modern-styled hotel. That would be my vote for a side trip from Sydney!
