How long do you expect to be in Hawkes Bay? How many wineries do you hope to visit?
It's been a while since my husband and I visited Hawkes Bay, but ones we visited and would re-visit include Craggy Range, Esk Valley, Trinity Hill, Pask, Vidal and Te Mata. Te Mata produces one of NZ's consistently highest rated reds, Coleraine.
Mission Estate is considered one of the prettiest wineries and it's right in Napier.
Three we didn't visit but would add to the list are Elephant Hill, Alpha Domus, and Crossroads. Their wines have gotten good reviews. I've tried Alpha Domus' wines at tastings and was impressed with their "Aviator". I can't remember if we visited Church Road, but we'd probably go there as well.
Both Te Awa Left Field and Esk Valley make good value, easy drinking rosés for around NZ$13 to $15. You'll find some wonderful rosés in NZ, but many are NZ$18 to $23 range.
In terms of international wine rankings, NZ's sauvignon blancs and pinot noirs garner the most accolades. For sauv blanc, you'll want to visit Marlborough. For pinot noir, the top regions are Central Otago, Martinborough, Marlborough, Waipara, and Nelson.

If you are interested in wildlife, don't miss a trip to the Gannet [booby] colony at Napier.
we did a self-guided trip round a couple of wineries which is probably not optimum as tasting is not great if one of you is driving; we met some people on a tour and they seemed to be doing the same ones we were. If you are serious bat it, I think a private tour would be better.
