What to do in Chiang Rai
We will have one complete day free in Chiang Rai. We will already have visited the Golden Triangle area. What should we do on the day we have free? Is there something that absolutely should not be missed?

Sounds like it might be a good day to sleep in a bit, do some shopping and wander around some. Is there more than one market area to visit or is there one main market that we should head for? I will definitely need to bring home gifts for a few people so some shopping might be a good idea. Also, any great restaurants that we should try out?

Here are a few things to do.
Visit the Rai Mae Fah Luang Art and Cultural Park which is set in a beautiful garden flanked by towering trees. Here one can learn about Lanna art and visit the elegant wooden pavilions built in northern style. Open daily from 10am to 6pm, except on Monday and admission is 200 baht for adults, 150 for kids.
Visit Wat Pratat Doi Khao Quai which sits atop the biggest hill just south of town with great views of the town
See Queen Mother's Garden if you have not already seen it. Need a car/driver to get there.
Hire a long tail boat for a trip on the river

Scotters' suggestions are in the Golden Triangle area, and it sounds like you're asking about Chiang Rai TOWN (Thailand's habit of naming provinces after the biggest city can be quite confusing).
There's a small night market in the center of town, if you're there in the evening. The city's main fresh market is about halfway between the city center and the river.
Two temples I would recommend are the Temple of the Emerald Buddha - where the Emerald Buddha in Bangkok was originally found. It's a beautiful little temple, and they have a copy of the Emerald Buddha that you can get up close to. The other temple is Wat Phra Singh, near the fresh market, which has one of the many copies of the Singh Buddha image and a lot of interesting buildings.
The Doi Tong hill on the river is rather interesting. It has a small temple and a large city pillar shrine (a "phallic forest". The original city pillar is in Wat Klang Wiang, which is also distinctive.
