No you are not delusional, we did stay at the metropole couple of times many years ago ( with mixed experiences!). Walked past it yesterday in fact. Now taken over by Accor it does look good. Our big splurge is on the final week of our trip where we are staying at the Hotel Muse Langusan in Bangkok. I got deal I couldn't refuse with my Accor Gold membership!

You've got to reckon in the total cost of getting your visa from a VN embassy/consulate. They don't publish the rates on their websites, so they can add on whatever they want for 'processing fees'. Plus there's the cost of you getting your passport to the embassy/consulate, either 2 trips in person, or postage charges (with the risk of your passport getting lost).
Whereas doing it all online takes 5 minutes. All you pay is, for example with www.vietnamvisapro.com the fee of US$9 (US$ 18 for 2 people) for the Visa Approval Letter (VAL) and then the published current VOA fee on arrival in Vietnam. You also have to print-off the VAL and Visa Application Form (2 pages) when you receive the VAL e-mail (2 days after sending the original application). It really is very simple, all done from inside your own home, and risk-free.
So my advice [and the advice of millions who've done it] is continue applying on-line.

LL, The consulates and embassies (at least in the US) do not add any "processing fees." They don't publish the price on their websites, but you can call or email for the prices. I prefer to have an actual visa in my passport before I leave for a trip. You prefer to do it online. Nathan wrong with either choice.

Why should it, you won't be the only ones on the flight need a VOA? Just make sure you've got your Visa Approval Letter (VAL), your completed Visa Application, a passport photo, and the correct fee in US$.
As already mentioned in this thread there's several reliable online Visa agencies to obtain your VAL. We used www.vietnamvisapro.net recently and they were very efficient.
