Vietnam in December

Hi

I'm planning a 23-day Itinerary in Vietnam (and about 6 days in Cambodia).
Eventually, I received the Visas today.
FlyingWe're flying from South Africa to Hanoi in early December.

After a few days in Hanoi between, taking the overnight ain to SAPA (and back) - OR is that a bad idea?
I am open to all suggestions.

1) Hiking up Mount Fansipan in December- Recommended or not?
2) Visiting SAPA in December (cold and maybe with snow - recommended or not)?
3) Going but not hiking?
4) Going up with a Cable car and hiking down, or vice versa?
(maybe better on our knees - we're relatively fit but not 20 y of age (not that they are fitter than us, haha)
5) Budget-friendly (our ZAR is not as strong as GPD, Euro or $)
