In Kerala take a look at www.cghearth.com - some of the most stunning hotel properties in India. Also take a look at www.neemranahotels.com esp at their Pondicherry property. Chennai also has a hotel i really like, Fishermans Cove, Taj group, lovely stretch of beach, amazing seafood. You are already late for Jan so need to start moving quite fast.
