Tokyo for the day
Later this month I will find myself with a 6-7 hour layover in Tokyo. Is this enough time to escape the airport and take a quick tour of Tokyo? If so I would appreciate anyone weighing in on one or two must see sights or if anyone might have the name of a guide I could engage for that short time?
Any suggestions are much appreciated!

I presume your layover will be at Narita Airport, which is 1.5-2hrs outside of central Tokyo. And you'll need to be back at least 1.5hr before departure time even if you have a connecting boarding pass. So at most you'll have just 1-2 hrs.
Others have suggested visit to Narita city, which is much closer and has a temple (though I've never been there).
The airport is OK, not as fancy as HK or S'pore, but they do have good sushi restaurants on the landside (ie after passport control). Note most landside shops take yen or C/C.

Hi
As mentioned already - Tokyo is quite a distance from Narita airport and you would not get much time there. So in my opinion it is not worth the hassle.

nothing much at Narita airport. for 6-7 hours layover, no point rushing to Tokyo. I would suggest you pay visit to Narita town..was there few years ago as we did not want to spend hours at Narita airport. To our surprise, it was a pleasant visit,we strolled along Omotesando Road, ve lunch at the local restaurant.we also visited Naritasan temple and the garden behind the temple, honest opinion, the garden is much better than any fees-collected park and it is free! So, if you ve to opt between stuck in Narita airport for hours and Narita town, opt for the latter for sure
