you might also take a look at the conrad which is quite new and very lovely and right on the beach...
an older mature hotel that offers a wonderful 'local town experience' is the bali hyatt in sanur.....we loved the town of sanur and being able to leave the hotel on foot and walk into a small town with good restaurants and some shopping opportunities...

Three of those are in Nusa Dua, which as others have already said is probably the worst place to stay if you're looking for a true 'Bali' experience. The Le Med. isn't bad, but it's a long way from anything else. Personally, I'd go with any place in Sanur.

All are typical package hotels with fine rooms and facilities, but not special places in really any way like you might find elsewhere on the island.
You might take the minimum package booking requirement (sometimes as few as 2 nights) and book the remainder of the nights of your stay yourself at one or two of the many lovely places there are to stay.
I know you said you can get a great deal, but have you checked the option of airfare only with the freedom to choose more interesting places to stay?

Nusa dua does not look like is happening.
