Hi all,
Does anyone have an authentic, but fairly simple, recipe for a Chinese dish? Not looking for Chinese/American restaurant fare, but some good down home cooking. Thanks in advance for any help.

Well, I have quite a few, on account of owning a few cookbooks, but it's hard to know what you'd like (e.g. spicy Sichuan, blander Cantonese style) and whether you have access to ingredients. Do you own a wok for stir-frying? Not trying to be unhelpful, but I would pick up an inexpensive Chinese cookbook and try out a few simple dishes.

I agree with NeilOz, asking for a "Chinese dish" is like asking for a receipe for "European" food. That could be Italian to Swedish to Spanish. You can be all over the range with Chinese cooking. Northern Chinese cooking is more wheat-based and often sweeter. What you are probably used to is Cantonese or southern Chinese cooking, as the southern Chinese form the diaspora that have emigrated (and opened restaurants).

I agree that a cookbook may be better source for you. If you want something that you are unlikely to have had in a restaurant and is good for winter, I would try something like congee (a rice soup with fish or chicken, this is often eaten for breakfast here) or one of the braised meat dishes from northern China.
