If you run out of dried fruit you can buy dried kiwi, pomelo, pineapple, mango and bananas in some skytrain stations and the food court at MBK. ( Prunes are imported from California.)
There are chips which look like nachos that are made from pumpkin which are quite good. Also peanut brittle with sesame seeds.

There of of course multitude of such available in shops and malls in Thailand, I don't know if you realise that.
I can't think of anything particular that you would 'not' be able to find in Bangkok malls.
Which village / nearest town ? You could find plenty of packed snacks etc at convenience stores/7-11 which are all over, depends how remote the 'village is'.

Most likely you will be able to get away with bringing foods into Thailand - they rarely inspect non-Thai citizens thoroughly!
But Thailand is a modern city with plenty of new and well stocked supermarkets. They have a good supply of snack foods, often cheaper than what you can buy in your home country! Just about anything you can possibly bring from home (other than home made stuff) you can find in a supermarket. Some supermarkets you can shop at are Tops, Bic C, Foodland and Villa Shops. Carrefour and Lotus Tesco also have good food departments. Sample list:

So, you can lug that stuff from home or not it's up to you. I do bring chocolate candy with me only because my favorite American brands are cheaper in my hometown when on sale!
