Hello vettaman,
We just returned last night (Zurich to DFW, then to Austin) on American. You are not in the minority in thinking about dehydration. Many people were asking the same questions during boarding for our flights. My husband has breathing problems and can start coughing at a moment's notice, so having water available at all times is essential for him.
I am happy to report that the crew seemed to go out of their way to provide hydration comfort for ALL the passengers. They were constantly going up and down the aisles with the drink cart, and one could also go to the back at any time for refreshment.
However, the gate attendants and security personnel were confiscating any and all empty bottles or containers, glass or plastic, before boarding. Any attempt by passengers to "sneak" an empty bottle on was highly frowned upon. I was, however, able to fill my empty soda can (that they provided) with their water once I finished the can. Then I stuck that in the seat pocket for immediate access when needed.
Also, the mealtime water provided on AA in the past has been a small plastic bottle. Not so now. It was a tiny container (about 2 inches) with a tear-off foil lid. Everyone got this on their tray. But then, of course, the beverage cart was immediately behind the food cart, so there was no problem.
Hope this helps.
Happy travels!
