Dgenep, my wife is also a celiac and gets ill quickly after ingesting wheat, oats, barley etc ... we took two safaris to Tanzania in 2006 (and are leaving soon for a third) and she didn't have problems at the lodges we stayed at since they typically had several options on the menu for each meal.
This is staying at the larger chain lodges (Sopa and Serena) and one smaller lodge (Ndutu) ... I'm guessing that for the smaller camps you should let them know in advance and they can plan ahead for you.
