I think the first 2 weeks in May would be great for Botswana- you'd avoid peak season pricing. However, if you just want to "tack on" a camp in Zambia, this is will be expensive and time consuming, and May isn't the optimum time. To get to South Luangwa from Livingstone, for example, is quite a long way and the flights would be costly for just a few nights. Even though it's my favourite safari destination, at that time of year and for just a few nights, I would say don't bother and stick with Botswana. If you want more variety than just the northern Botswana area, you could always include the Central Kalahari or one of the Makgadikgadi camps for meetkats. You could even try Hwange. Although May also isn't the optimum time, it is much easier and less expensive to access from Vic Falls than any of the Zambian parks.

I would come back to Zambia at a better time of year, like Aug-Sept. It's peak season, but peak season in Zambia is about the same cost as shoulder in Botswana, probably a bit less even.
