Fodor's Review:

The indefatigable Guillermo Rodríguez, who has commandeered the kitchen here for more than a decade, has won just about all the country's culinary competitions. No wonder he also serves as a private chef to Chilean president Ricardo Lagos. You won't find dishes like marinated scallops over octopus carpaccio or king crab tartar on any other menu in town. The expertise offered by the city's most prized sommelier, Alejandro Farias, is reason enough to visit. The only disappointment is the uninspired dining room, which pales next to the city's other top-notch eateries.

Horrendous, overpriced food!

After seeing the Fodor's recommendation, I was eager to try Bristol. I was severely disappointed when the food was inedible, the service poor, the prices absurd, and the atmosphere about the same as a mall food court. To top it off, the Hotel San Francisco charges an 18% tax on the meal for anyone not staying at the hotel. AVOID AT ALL COSTS!

Prix fixe menu includes sampling any wine you want on the excellent wine cart. The chef cooks a cross section of excellent local fare (ostrich??) Try the congrio (conger eel) or corvina (sea bass) or, better still, both. Better value than the Picasso or Alex in Las Vegas.
