Fodor's Review

Chef Julian Serrano—renowned for Picasso at Bellagio—chose to honor his homeland's tapas and paella traditions at his eponymous restaurant in Aria. Some of Serrano's signature dishes offered include tuna carpaccio with toasted pine nuts, goat-cheese-and-mushroom-stuffed piquillo peppers, salmon with truffle bechamel, and Spanish tortilla with potatoes and eggs. The menu also features vegan tapas, paellas, and several large plates. For dessert, try the almond-infused Santiago's Cake. There's even a special three-course prix-fixe pretheater dinner menu for $39, as well as a signature $59 tasting menu. During lunchtime, seats on the edge of the "patio" that face hotel registration and the casino are great spots from which to people-watch.
