This hotel occupies an 1895 school building, giving it a unique atmosphere. It's owned by an educational institute, the ROC of Amsterdam, and operated as a training ground for students of the hotel management program (which accounts for the fresh-faced staff). The building has wide, grand corridors and stairwells, and the rooms have high ceilings, carpets you can sink into, and gleaming bathrooms. The in-house restaurant is one of only a few that serves New Dutch cuisine; you can try warm smoked eel here, with radish, apple syrup, and grated lemon. Pros: historic building, trendy bar, in-room massages. Cons: staff can be easily distracted, location not very convenient.
