"The Alchemist" is an apt name, as the chef's transformations are magical. Try the fiore molle della Valnerina, baked saffron cheese, bacon, and zucchini—served only here. In summer, cold dishes to try are panzanella, vegetable salad mixed with bread, or the barley salad tossed with vegetables. The farro (spelt) soup made with Sagrantino wine is a local specialty. The desserts are delicious: all are made on the premises and not too sweet.
