Chef-proprietor Massimo Bottura says he learned about food from under his grandmother's table. He's done stints with Adrià and Ducasse, takes inspiration from music and literature, and pours all these influences into creating some of the most memorable food in all of Italy while remaining true to his Modenese roots. The restaurant contains only 11 tables; decor is muted (except for splendid floral arrangements) and service superior. Although it's possible to order à la carte, most everyone opts for one of the two tasting menus—either Festina Lente (nine courses) or Tutto ("everything," 12 courses). One signature dish is 5 stagionature di Parmigiano Reggiano (five versions of Parmesan in various stages, served in five different textures and temperatures). Reservations are not only essential, but must be made months in advance.
