La Reserve

This Michelin-starred hotel restaurant—a marvel of light and color—has been a crown jewel of the Mediterranean since it opened in 1880. Chef Julien Roucheteau uses fresh Mediterranean ingredients in original takes on classic dishes like langoustine tails roasted in hazelnut butter, and the four- (€165) and six-course (€195) set menus are a better value than ordering à la carte. The chandelier-bedecked salon is lined with bay windows that offer views of a watery nirvana.
