Subo, a bright, intimate new star in Newcastle's dining scene, has quickly become the hot spot in town. A stylish bistro in the central business district, it's run by husband-and-wife team Beau and Suzie Vincent—chef Beau has a long pedigree at fine Sydney restaurants. Subo regulars favor the $75 five-course tasting plate, which might feature prawn carpaccio and foie gras, confit of chicken wings with blackened corn, Wagyu beef with smoked leeks, and chocolate-orange mousse with rum-and-orange syrup cake. There is only a limited à la carte menu of three items per course that may include pan-seared duck breast or mullaway fish with prawn and crustacean sauce.
