If you're looking for excellent Lao food, this noted restaurant and cooking school is the place to start. Try a set menu to sample a variety of the country's cooking styles or order from the lengthy menu that includes kaipan, a crispy dried Mekong River plant covered with sesame seeds and served with a local chutney (the local equivalent of chips and salsa), and orlam, an eggplant "casserole" that can be compared to an exotic gaeng kiew waan (Thai green curry) and is a local favorite. You can even try venison, wild boar, or kangaroo steaks (the latter arguably not so traditional).
