Next door to Rogue River Creamery, this artisan chocolatier handcrafts outstanding chocolates using local, often organic ingredients. A favorite treat is the Smokey Blue Cheese ganache made with Rogue River blue, but don't overlook the dark-chocolate–marionberry bonbons (made with organic marionberries grown on-site) or the delectable hazelnut chews. Most unusual, however, is the chocolate-covered bacon, coated in chipotle and brown sugar, hand-dipped in chocolate, and sprinkled with sea salt.

Just a few miles up the road from Medford in the little town of Central Point, you'll find one of the nation's most respected cheese makers, started in 1935 by Italian immigrants. Current owners Cary Bryant and David Gremmels bought the company in 2002, and promptly won one of the highest honors for cheese making, the London World Cheese Award. You can purchase any of the company's stellar cheeses here, from Smokey Blue to a lavender-infused cheddar, and you can watch the production through a window on most days. Delicious grilled-cheese sandwiches and local wines and beers are also available—enjoy them at one of the sidewalk tables outside.

A few miles' drive south of town you'll find the retail outlet of this company that produces those small, handsomely packed, superfine chocolate bars sold in fancy-food shops and groceries throughout the country. Although Hershey Company now owns the company, Dagoba was founded in Ashland, and its operation remains here, where a small retail shop—open weekdays only—sells its goods.
