Sapphire Pool & Dayclub opens during the warmer months on weekends with an $8 million, three-level party mecca with cabanas and daybeds. El Dorado Cantina, Island Sushi, Sysco, and Sapphire Grill—all part of the complex—dish to the club and pool party 24 hours a day.
