Dinner is theater at this one-of-a-kind steakhouse overlooking Encore's swanky pool complex. At least once an hour, the lights dim, music comes up and the walls and ceiling quite literally "switch" from one motif to another (hence the name). The effect is hokey at times; thankfully, the food holds its own. Sure, the place sells a variety of Nebraskan corn-fed beef steaks, but Chef Rene Lenger also has put together an eclectic menu of other options. Depending on the season, selections might include Chilean sea bass with olive oil-poached tomatoes or Jidori chicken with macerated golden raisins and pine nuts. One word of warning: on Friday and Saturday nights, patrons lining up for entry into Surrender next door can be obnoxiously loud.
