Miami's restaurant scene has exploded in the past few years, with new restaurants springing up left and right every month. The melting pot of residents and visitors has brought an array of sophisticated, tasty cuisine. Little Havana is still king for Cuban fare, and Miami Beach is swept up in a trend of fusion cuisine, which combines Asian, French, American, and Latin cooking with sumptuous—and pricey—results. Locals spend the most time in downtown Miami, Wynwood, Midtown, and the Design District, where the city's ongoing foodie and cocktail revolution is most pronounced. Since Miami dining is a part of the trendy nightlife scene, most dinners don't start until 8 or 9 pm, and may go well into the night. To avoid a long wait among the late-night partiers at hot spots, come before 7 pm or make reservations. Attire is usually casual-chic, but patrons like to dress to impress. Don't be surprised to see large tables of women in skimpy dresses—this is common in Miami. Prices tend to stay high in hot spots like Lincoln Road, but if you venture off the beaten path you can find delicious food for reasonable prices. A modern and healthy take on Peruvian cuisine that doesn't disappoint on flavor, Suviche is the perfect place to pop by for a great and affordable meal. You can't miss with anything you get on the menu, and the staff always has creative suggestions. Start with a fresh ceviche for the table, and don't limit yourself, make sure to get the full seafood version with shrimp, calamari, and mahi-mahi. If something warmer is needed to start, the lomo saltado spring rolls are definitely the best bet. The arroz humedo as a main is reminiscent of a risotto, with smokier flavors and is decadent when tenderloin is added on top. The smoothest caramel flan served with a fresh key-lime whipped cream cannot be missed, even if it has to be taken home.

These street-style ones are especially adored thanks to fresh, hand-ground blue masa tortillas and fillings, from the classic al pastor (grilled pork topped with pineapple) to chapulines (grasshopper). The latter was Guy Fieri's favorite on his Diners, Drive-ins and Dives visit. Lightly fried, puffed tortillas, called totopos (a Mexican version of chips) are the stars here, served with choice of salsa, guac, or queso. There's also a full liquor bar with specialty drinks and frozen cocktails.

The slick, contemporary waterfront restaurant at Pérez Art Museum Miami (PAMM) offers seating both indoors and out, with chic decor and accessories true to its "green" name that blend seamlessly with the living walls and hanging gardens strewn across the museum's exterior. The exceptionally affordable, one-page menu features eclectic epicurean lunch plates that include a variety of flatbreads, a house chopped salad (with green goddess dressing), and a gourmet cheeseburger with applewood-smoked bacon.

There's a helluva lot of southern lovin' from the low country at this funky South Beach spot, where Miami's A-list puts calorie-counting aside to indulge in comfort foods and innovative drinks. The family-style menu is divided between small plates, "the bird" plates, and sides and snacks, but have no doubt that "the bird" takes center stage (or plate) here—you'll rave about Llewellyn's fine fried chicken, which requires a 27-hour marination and slow-cooking process, for weeks to come.
