On a Diamond Mountain site first planted to grapes in the early 1860s, Schramsberg produces sparkling wines using the méthode traditionnelle (aka méthode champenoise). A fascinating tour covering Schramberg's history and wine-making techniques precedes the tasting. In addition to glimpsing the winery's historic architecture you'll visit caves, some dug in the 1870s by Chinese laborers, where 2 million–plus bottles are stacked in gravity-defying configurations. Tastings include generous pours of very different bubblies. To learn more about them, consider attending the session at which the wines are paired with cheeses; not held every day, this tasting focuses on the ways wine influences our experience of food and vice versa.
