Owner Tru Miller has won several awards for her unique blended wines, helping to bring outside attention to the valley. Established in 1997, Adobe Guadalupe was one of the first vineyards to be planted in the region, and today it remains among the best with lovely wines (and rooms) named after angels. A fountain courtyard separates rooms from the main house where breakfast is served at a long wooden table. Most come here to relax and enjoy the wines, meaning rooms are simple with king beds, terra-cotta tile flooring, and a European feel that exudes both warmth and elegance. The inn's talented chefs do an admirable five-course dinner in the romantic dining room beside the fire, generously paired with Adobe Guadalupe wines, for $110 per person; the three-course lunch with wine is available for $82. Tru's stable of beautiful horses—she'll take you around the property—is yet another draw (one hour, $100).

One of the Centro Histórico's nicest and newest hotels is in a remodeled mansion across from the Pedro Infante monument. Rooms are simple, but each has unique details and subdued colors as well as Italian ceramic floors, Mexican furniture, a plasma TV, plush robes, and windows so soundproof that you could sleep through a Carnaval procession in the street below. Most rooms also have terraces with views of the Olas Altas beach and the Pacific. The staff is friendly, and service is personalized. Dinners and other special functions are sometimes organized for guests during holidays and events in town.

This lavish, adults-only resort was designed around the surrounding jungle and has a great beach, nonstop activities, and terrific food for a resort in its price range. Activities like snorkeling, diving, kayaking, aqua aerobics, water polo, and pool volleyball can keep you occupied for the duration of your stay. The marble-floor lobby has bamboo furniture and a central waterfall underneath a giant palapa roof. Rooms have pleasant wood furniture and private terraces with views of the lush foliage. Three large pools, separated from the outdoor hot tubs by an island of palm trees, look out onto the spectacular beach. The food is exceptional and varied, with everything from Spanish tapas to fruit smoothies.
