Fodor's Expert Review & Moshik

This bi-level waterfront restaurant with floor-to-ceiling windows overlooking the Oosterdok serves some of the most creative (and dearly priced) French-inflected creations in town. Executive chef Moshik Roth shows off his skill combining unusual flavors and textures in such dishes as the Butterfly, inspired by Damian Hirst: goose liver with blackberries, almond, and hibiscus. For the best sampling, opt for either the five- or eight-course tasting menu; there's a well-thought-out vegetarian version, too. The name is based on the last name of one of the restaurant partners.
