The name of this homey rustic cellar, a longtime Eger dining landmark, means "white stag," and game is the uncontested specialty. Favorites include venison fillet served in a pan sizzling with goose liver and herb butter; wild boar with juniper berries in red wine sauce; rabbit (presumably not wild) spiced with thyme; and knuckle of lamb (no, not wild either) with mushroom-bacon sweetbreads. The many antlers, skulls, skins, and mounted birds hanging from rafters and walls—not to mention the two little stuffed goats by the entrance—make the inn look like Archduke Franz Ferdinand's trophy room.

For substantial Hungarian (and, it seems, Bavarian) fare, it's impossible to beat the popular HBH Bavarian Beer Tavern, which has a great location on Dobó tér. The cuisine ranges from traditional Hungarian fare such as veal paprikash to Bavarian-style knuckle of ham. Any of these will go down smoothly with a glass of Bull's Blood—or perhaps a Munich Hofbräuhaus, the beer that gives the restaurant its initials.

The restaurant in the Imola Udvarház offers perhaps the best dining experience in Eger. The spacious room is a bit formal for backpackers, but welcoming nonetheless. As this is Eger, wine plays an important part on the menu, which features upscale comfort food like whole trout with garlic sauce, roast mangalica pig, and rosemary lamb with buckwheat. Wines are culled from the best Eger has to offer. Order a St. Andrea Hangács Bikavér if you want to sample the heady red wine Eger is best known for.

The Palacsinta Castle Restaurant is the place to have your fill, and how, of Hungary's famous rolled-up pancake, the palacsinta. In this hip little cellar establishment (pleasantly cool on a hot summer day), adorned with funky wall art from Dalí prints to a display of cigarette packs to a stamp collection (and an aquarium full of live fish), you can choose from any of more than two dozen varieties, from the "Boss's Favorite"—a potato-flour palacsinta filled with (pork) knuckle ragout, beans, cabbage, and sour cream—to vegetarian (indeed, egg-free) sorts including the "Spring Pancake" (ewe cheese with dill and chives), to traditional, sweet, jam-filled palacsintas. Servings are lavish, prices quite reasonable. If you order a meat- or vegetable-filled palacsinta, you might ask them to take it easy on the salt.
