The house Champagne-and-yuzu aperitif is a perfect send-off for a scintillating starter of pressed foie gras and smoked eel, followed by monkfish in a crayfish-and-shiitake bouillon or wagyu beef with sweet onion puree and crispy hazelnut tuiles.
