Glimpse the future of British cuisine at this rickety wood-paneled dining salon at the atmospheric 1730 Newman Arms pub in Fitzrovia. A one-time haunt of Dylan Thomas and George Orwell (it's even mentioned in 1984), the menu showcases the finest Cornish- and Devon-sourced meat, vegetables, and fresh fish with a rare instinctive ease. Sashimi-thin slivers of mackerel happily vie with house-fermented gherkins, while plump ducks' hearts pair off with baby beetroot and outsized blackberries. Perfect turbot comes with charred whole baby fennel plants seemingly pulled straight from the earth, and a block of Old White pork belly mesmerizes with charred baby leeks, smoked spelt, and a revelatory sauerkraut purée.
