Rock-Fort is the ice cube down the back of Brugge's "traditional" dining scene; it's brash, pointedly modern, and relentlessly inventive. Even the decor–-pale, flesh-pink spotlights bouncing off green uplights–-creates an almost off-kilter haze. The menu's à la carte selection is no less inventive, and divided by portion size into small, medium, and large plates, with diners able to mix it up tapas-style or opt for one big dish. The style is modern French and leans heavily toward seafood. Chef-owners Peter Laloo and Hermes Vaniefde specialize in taking simple dishes and throwing in unusual ingredients to create flavors that entrance and seduce. It's unlike anything else in Bruges—and all the better for it.
