Named for the late Norma Shirley, known as the Julia Child of Jamaica, Norma's at Seasplash is now helmed by a student of the late chef. Dishes such as braised oxtail with butter beans in a rich Jamaican sauce and smoked pork chops marinated in ginger make use of recipes that made Norma famous island-wide.
