On land overlooking Inle Lake (rather than on stilts floating on the lake), this boutique hotel is spread across 24 acres of lush grounds. Using seeds from the south of France, Inle Lake View Resort grows organic vegetables in its garden and purifies all water in-house using a W.H.O.-approved system. Unless you go into town or stop for lunch while you're out on the lake, you'll be eating these vegetables for breakfast, lunch, and dinner, as there are no restaurants near the hotel. It's good, then, that the food at the hotel is so well-prepared, albeit pricier than local restaurants. The rooms are lovely in their simplicity—flooring, beds, and vaulted ceilings are all done in gleaming hardwood, plus beds are made up with crisp white sheets and mosquito nets, and fans cool the room; there's no a/c and no need for it.
