Nilaya, which roughly translates to "a hidden dwelling," could not be more aptly named. This hip, hilltop retreat is etched out of the laterite stone that you'll see all over this beach state, and enhanced with mosaic and ceramic tiles into a Goa-meets-Gaudi tableau. Nilaya's location is away from the beaches—in fact, visitors who choose to leave the hotel will require taxis to do almost anything. But with silk-lined daybeds by the pool, healthy and flavorsome food and drink, an excellent cocktail list, and an elevated view of the distant sea, who needs to leave? If you must, the property owns a beautiful 65-foot dhow (a teak sailing vessel) that will take you up the Chapora River on a decadent day trip.
