Don your best outfit (casual wear isn't allowed) and have a seat in the red-and-white, keyhole-arched dining room, originally opened in 1902 for dignitaries to celebrate the inauguration of the Aswan Dam. The atmosphere is unforgettable, and the French-inspired menu is heavy on seafood.

This Nubian-style restaurant sits on one of the small islands around the cataracts of the Nile, in front of the Sofitel Old Cataract Hotel. Big picture windows, as well as patio seating, command scenes of river rapids, the gargantuan boulders of nearby Elephantine Island, and the desert beyond. Those views are upstaged only by what comes to your table, starting with fresh-baked brown flatbread cut in quarters, accompanied by a plate of mixed pickles, just like in Egyptian homes. Dishes of baba ghanoush, cucumber salad, and moussaka (just grilled eggplant) are decorated with carved vegetables. The quart-sized lamb tagine arrives still bubbling hot, topped with nicely browned onions. Live Nubian music adds extra spice to your dinner. Call to have the restaurant's boat pick you up, or just flag a felucca.

One of the city's Nile-front pontoon eateries has, as you'd expect, superb views, especially at sunset. The menu is somewhat limited here, but you'll find Egyptian tagines and charcoal-grilled kofta (ground-beef meatballs), kebabs, pigeon, and chicken. There is no alcohol, so instead try one of Aswan's ice-cold libations: karkadey (hibiscus tea), tamarind, carob, or dom (a drink made from the fruit of Sudanese palms). Service could use some improvement.

The pasta and main dishes on the basic Italian menu are appetizing alternatives to Aswan's ubiquitous kebabs and tagines. Tagliatelle served with a fresh tomato sauce and a remote relative of Parmesan cheese is fresh and surprisingly light. Although it's homemade, the lasagna is not always spinach-based, as advertised; this Upper Egyptian version is a hot, hearty tagine of spiced ground meat, pasta, and cheese topped with béchamel sauce. Breaded veal cutlets served in tomato sauce and cheese are tasty and substantial.
