There is no hard rule when it comes to tacos, at least not here in the United States. There are authentic tacos, a Mexican street food, small and soft with a simple meat filling and garnished with onions, cilantro, and lime; and then there are fusion tacos, a spin on tradition by way of culture clash and alternative cooking techniques or ingredients. As long as there are fillings in a tortilla, it’s a taco. Let’s not argue with science.

Tacos first appeared in America in the 1900s, thanks to migrants moving from Mexico to L.A. Naturally, everyone fell in love, and they exploded in popularity. Whether you like tacos the way they were introduced, lathered in sauce Tex-Mex style, or something a little out there (like the corn ice cream taco), you’ll find it here in our vast and diverse land. We round up all the best tacos in America, no matter what your palate for queso.

Veracruz All-Natural

WHERE: Austin, Texas

What started out as a single food truck for Reyna and Maritza Vazquez quickly morphed into an ATX institution. The duo from Veracruz, Mexico, now has brick-and-mortar locations all over town, including at The Line Austin, famously situated next to the Congress Avenue bat bridge. The Al Pastor Taco and Grilled Fish Taco are classic options from Veracruz All-Natural’s extensive menu, but we highly recommend the vegetarian La Reyna Taco (egg, a variety of fresh veg, and Monterey Jack cheese) and the El Breakfast Taco (bacon, chorizo, pinto beans, Monterey Jack cheese).

Fonda Rosalinda’s

WHERE: Greenville, South Carolina

Guests are welcomed in like extended family at Fonda Rosalinda’s, and the food is certainly home-style, cooked by mother-daughter owners no different from their own meals after closing time. Everything is made from scratch on-site, and their tacos are hands down some of the best we’ve tasted in the South. They need little explanation: these are classic meat, fish, and veg street tacos, and are topped with cilantro. They’re healthy yet outrageously good, so zero guilt for doubling down on lunch.

Tlayuda

WHERE: Los Angeles, California

Get a real taste of Oaxaca just outside Los Angeles’ Larchmont area. Tlayuda LA handmakes all their corn tortillas, dripping with mole that’s the perfect blend of sweet and savory. Choose between the Two Mole Sauce Taco, a chicken mole topped with queso fresco, and the Two Vegan Mole Tacos, hibiscus flower with house mole sauce topped with red onion. They’re both equally delicious and the portions are always generous—expect very sticky fingers.

Taquería los Puñales

WHERE: Portland, Oregon

Taquería Los Puñales is a proudly queer-owned Mexican taqueria, helmed by third-generation taquero David Madrigal and his business partner Brian Aster. A number of the menu items come from David’s mother’s recipes, including the standout dish, the Chicken Tinga Taco. It’s made of shredded chicken sautéed with caramelized onions, braised in a house-made chipotle sauce, and drizzled with Mexican sour cream. The menu also features an impressive selection of vegan and vegetarian tacos, and there’s a vibrant full bar on-site.

Cactus Cantina Mexican Grill

WHERE: Multiple Locations in Alabama

We’ve all seen smash burger tacos go viral on TikTok, but you can get it done by the pros, too. Cactus Cantina’s Alabama restaurants offer Smash Burger Tacos, flour tortillas with a smashed ground beef patty, topped with lettuce, cheese, and tomato, and a squirt of their signature homemade sauce. The result is a bite-sized burger, of which you’ll definitely want to order the three-piece selection over the two.

Tin Roof Tacos

WHERE: Boise, Idaho

You’d think that the best Tex-Mex would be in Texas, but Idaho has a mighty challenger to the title. That could be down to Tin Roof Tacos’ owners hailing from Dallas. Sisters Susan and Sandy moved to the Gem State but missed the staple food of their home. They decided to bring BBQ Brisket Tacos, Pulled Pork Tacos, and other Tex-Mex treats up north, and the rest is history. If y’all are feeling extra indulgent, don’t miss their Fried Chicken Taco, breaded chicken breast, with cilantro coleslaw and jalapeño ranch dressing.

Fat Fish Taco

WHERE: Caldwell, New Jersey

Fat Fish Taco brings the catch of the Atlantic onto your plate. The focus is on clean, whole foods, with a taco menu that includes seafood creations like the Mahi Taco, Crab Cake Taco, Spicy Shrimp Taco, and the treat yo’self Lobster Taco ($22!). Taco Tuesdays add value to the splurge, where you get a side of rice and beans free with a purchase of any two tacos on the menu. Non-seafood tacos are also available.

Birria-Landia

WHERE: New York City

Since 2019, José and Jesús Moreno’s Birria-Landia food trucks have been rolling New Yorkers’ eyeballs to the backs of their heads, even earning acclaim from NYT critics. The star taco here is centered on the brother’s love for Tijuana-style birria de res, a beef dish marinated in adobo and slow-cooked for five hours. The meat, combined with their corn tortillas, results in a deep flavor profile and smooth texture with every mouthful. Add a side of their brothy consomé if you just can’t get enough.

Lucky Tacoshi

WHERE: West Covina, California

The West Coast does both Japanese and Mexican food so well that it only makes sense to marry the two cultures in a taco. That’s exactly what the clever cogs at Lucky Tacoshi did, putting fresh seafood in a crispy seaweed shell. Guests can get their crunch into delights such as the Tempura Shrimp Sushi Taco, the Salmon Sushi Taco, and even the Fried Oyster Sushi Taco. The restaurant makes tasty sushi burritos, too.

Lucido’s Tacos

WHERE: Chicago, Illinois

Couple Adan and Andrea Lucido started selling Al Pastor Tacos from their kitchen on weekends, but once word got out, they had to up production and turn Lucido’s Tacos into a full-scale business. Those tacos are now hailed as the best in the city. The meat is cooked on a trompo, marinated with a touch of pineapple, and fired for a crispy outside and a tender inside. It’s then laid generously on a warm tortilla with minimal toppings so you can really taste every flavor of the meat. The Asada and Arrachera Tacos are also worth a try.

Taco Bamba

WHERE: Richmond, Virginia

Founded in Falls Church, Virginia, by Chef Victor Albisu back in 2013, Taco Bamba has since become a regional sensation, with multiple outposts in VA, plus DC and NC. It’s all down to the creativity—each location comes up with its own special take alongside classic shells. Richmond’s our fave as it has the slightly out there Bamba Sailor, a taco stuffed with pastrami-spiced beef tongue, grilled knackwurst, cheese, rye mustard, jalapeño, onion, and pickle chips.

Taqueria La Marea

WHERE: Honolulu, Hawaii

Who knew you could still get such authentic Mexican street tacos all the way out in the Pacific Ocean, but Taqueria La Marea ensures locals need not miss out due to proximity. The taco shack is well-known for the best Fried Birria Tacos on the island, but you’ll also want to chow down on the Crispy Chicken Tacos (braised chicken in guajillo sauce in a crispy shell) and, because you KNOW it’s super fresh here, the fish tacos. A $30 taco sampler picks out the lot for you on a tray.

Taquiza

WHERE: Miami, Florida

This North Beach taco shack has received non-stop praise for its blue corn tacos. Taquiza was one of the first places in town to nixtamalize, grind, press, and griddle their tortillas in-house daily, sourcing blue corn from the Midwest. Their signature shells wrap around fillings such as flanked grilled steak and chapulines, aka toasted grasshoppers from Oaxaca, served over avocado for a balance of crispy and creamy. Hey, don’t knock it till you’ve tried it. Don’t forget the horchata.

Empellón

WHERE: New York, New York

Last but not least, we had to round the list off with something sweet. Empellón is an upscale Mexican restaurant in Midtown that has the perfect grand finale. The Corn Ice Cream Taco takes a waffle cone, folds it into a taco shape, and fills it with corn-flavored ice cream. It’s then topped with a creamy corn-infused sauce and sprinkled with freeze-dried corn streusel. If that doesn’t satiate your corniness, nothing will.
