Patatas arrugadas, the celebrated "wrinkled potatoes" of Las Canarias. Served with two mojos, the red and the green. Not difficult to make, and later that week I was treated too a private lesson in making mojo rojo, and that was a highlight of the trip for me. People could not have been kinder!
