This is so really delicious . And easy. Preheat oven to 350. Put 4 cups chopped apples and/ or other fruit( i like it chunky) into a large bowl. Add 2 eggs and 1/2 c sugar, maple syrup or honey and 1/2 cup neutral oil And stir together. Sift in 2c flour( I use whole wheat pastry flour or spelt, but can use AP) , 2t baking powder and 1 t cinnamon( i add 1/2 t cardamom and or ginger). Mix well with a spoon until blended. Bake in 9 in round pan 2”” deep , 40-50 minutes.

Here’s our newest very wacky purchase for the garden. We are definitely not in New England anymore. StCirq, the colander or large strainer method works fine for spaetzel and is easy. Joto, how was your pavlova? What did you fill/ top it with? Recently I saw passionfruit curd used and drooled. Liz, I’m glad your FIL will be vaccinated soon. My 82 year old BIL in FL got his yesterday and my sister is very relieved. She’s scheduled soon. When will your parents get theirs?

First pic is some of the stonework being done and one of several footbridges over areas that will act as little arroyos , and the vessel that will be a birdbath/ fountain that will run off a solar pump, sun being in unlimited supply here. In the background you can see the grey wall which will soon be plum. The painter is coming tomorrow to do some test patches . Gutters go up at the end of the month and then the water storage tanks will arrive shortly thereafter.
