Imperial Chinese Seafood Restaurant, Pink Pearl, and Shanghai Chinese Bistro are very good Chinese restaurants in Vancouver, and even better may be
Sun Sui Wah and Kirin Seafood in Richmond.

Sha Lin noodle house is very good. It was featured on Rachel Ray's $40 a day. We really enjoyed it!

For a real hole in the wall but wonderful Vietnamese/Cambodian go to Phnom Penh. Thanks to Fodorites we ordered the chicken wings (amazing) among other things and even the owner demanded to know how we knew "what to order." The butter beef in soy/lime/garlic and the "everything dry noodles" were also wonderful.

Had a great dinner at Cioppino's also.

While I'm usually not big on eating at a hotel, our dinner at Bacchus at The Wedgewood was outstanding!

I really loved Bishop's and Go Fish.

Take a look at http://www.eatsleepgo.com/BritishColumbia.html It has the restaurants plotted on a helpful map with their reviews.

Give a look at the Canada board, for there have been a few responses since you've posted.

We recently made reservations for West for our 5th year anniversary. Other places we looked into included Cioppino's, Lumiere and Gotham. All "fine dining", from what we understand.

Happy eats!
