If you like to golf, there are a number of courses open to the public. Also some nice wineries in the vicinity. Don't know what the Boardwalk in Santa Cruz is like in the winter, but it's a easy drive and interesting in the warmer months. Lots of beautiful scenery, 17 Mile Drive, Carmel, try the Monterey Peninsula web site.

Joe - My family had a great experience late this summer on a six hour whale watch through www.montereybaywhalewatch.com ... for about $40 per person, we saw dozens of ocean things and even had some humpbacks come right up to the boat.
The rest of your time can easily be spent in Carmel (shopping and eating) or Monterey pier (touristy stuff)... have fun...

If you're interested in architecture, you might enjoy Monterey State Historic Park. It offers guided tours daily of California's oldest Adobes, buildings that have withstood earthquakes, fire and the tests of time.
